Update s3backer to 2.1.1

This updates sysutils/fusefs-backer to 2.1.1. Quite a lot has changed, the changelog can be found at https://raw.githubusercontent.com/archiecobbs/s3backer/master/CHANGES.

Could you explain why did you switch to fuse:3?

It fails to build.

I switched to it because for me, it didn't build at that time using the default fuse version. Feel free to switch it back if that helps. It does build for me and I have it running in production.
